Tasting notes

Appearance: Clear, crystalline, with high visual density. Nose: Pronounced aromas of soy sauce, nuts and fresh mushrooms, accompanied by hints of ripe citrus, sesame and dried fruit. Hints of leather, coffee and cocoa mingle with earthy, slightly mentholated notes. Palate: Full, dry attack, with flavours of soya, mushroom and dried fruit. Hints of roasted coffee, nuts and cereals come through on a warm, supple texture. The structure has a fine astringency and a long finish with notes of ripe fruit, umami and damp earth. Overall impression: Baijiu with a broad aromatic profile, combining earthy, spicy and fruity dimensions, with a gradual evolution and sustained length.
