Appearance: Colourless, crystal-clear Nose: Earthy and fermented notes of mushrooms and woodland, accompanied by a hint of dried fruit. Palate: The supple attack reveals a savoury, umami-rich structure, somewhere between soya sauce and mushrooms, extended by toasty notes of baked bread. A slightly salty minerality brings freshness and accompanies a distinct, mildly astringent development. The long finish is spicy. Overall impression: A rich and flavourful wine with a distinct character, where the fermented and umami notes are underpinned by lovely freshness and a long, spicy finish.
