Palate: The attack is intense and distinctly sweet, driven by honey and a hint of burnt caramel, before the herbs and gentian come to the fore on the mid-palate. The bitterness fully counterbalances the sweetness and ensures a lovely balance, despite the subtle acidity. The finish is persistent, ending on a distinct bitterness. Overall impression: A well-structured whole, where the honeyed sweetness is counterbalanced by a herbaceous bitterness, with a lovely botanical balance.
