Appearance: Crystal-clear, with straw-coloured highlights Nose: Intense and expressive, dominated by fermented soya sauce and enhanced by floral and fruity notes. Palate: The attack, full-bodied and structured, allows the fermented soya sauce to come to the fore against a backdrop of ripe fruit and forest floor notes, with an umami and salty dimension. The texture, dry and firm, gains freshness thanks to lovely acidity, whilst the alcohol remains well integrated. The finish is long and lingering. Overall impression: An intense and complex wine, where fermentation and warmth are elegantly balanced around a rich umami expression.
